Glorious 12th at The Grill at The Dorchester

01 August 2011 The Grill at The Dorchester will once again introduce Grouse to its seasonal menu on 13 August 2011 in celebration of Glorious 12th, the start of the Grouse-shooting season in Britain.

The Grill at The Dorchester enjoys a reputation as one of the UK’s best restaurants showcasing classic British cuisine. As a nod to the long-held tradition of Glorious 12th, which sees shooting enthusiasts head to the moors of Scotland and Northern England, head chef of The Grill at The Dorchester, Brian Hughson, will introduce his Grouse menu. Beautifully cooked dishes such as warm salad of grouse with Cumbrian ham, fried quails egg and summer truffle and traditional roasted grouse with bread sauce, home cured streaky bacon, game chips and roasting juices will be available from 13 August until the end of the grouse shooting season in December. With the provenance of ingredients being Brian’s passion, The Grill at The Dorchester sources its grouse from the Yorkshire moors, ensuring diners enjoy the best that the British Isles has to offer.

v  Salad of Yorkshire grouse breast with Stichelton, bramble dressing and apple.    
v  Warm salad of grouse with Cumbrian ham, fried quails egg and summer truffle.
v  Steamed grouse breast with foie gras, cabbage and braised grouse faggot.
v  Ballotine of grouse with its own liver parfait, sloe juices, pillows of lovage gnocchi and Scottish girolles.
v  Traditional roasted grouse with bread sauce, home cured streaky bacon, game chips and roasting juices.
