The New York Palace

Christopher Day knows how to dazzle, and goes out of his way to ensure that clients have the best possible experience in fine dining and drinking at Gilt at The New York Palace. He began in Manhattan at Oceana, where he was quickly promoted to Captain, and then to Maitre'd and Assistant Sommelier. After two years, during which Oceana received three stars from the New York Times, Christopher's city career continued at Quince, Cello, Flute, RM, and Per Se.

At Gilt Bar, his creative cocktail list plays off the 19th century grandeur of the Villard Mansion's historical Gold Room, with signatures like the "Chef Bogle's Bourbon Smash" which includes Woodford Reserve Bourbon, Fresh Mint, Lemon, and Sugar Rim, or for those guests looking for something on the sweeter side, there's the "Columbus", which combines Mount Gay Rum, Palo Cortado Sherry, Fresh Pineapple Juice, and Ginger Ale. In addition to managing Gilt, Christopher has created one of the most ambitious restaurant tea programs in the country, offering 65 selections and a wide variety of seasonal and limited special offerings.
