This summer, we’re bringing a taste of California to The Dorchester Rooftop, all the way from The Beverly Hills Hotel’s famous Polo Lounge restaurant. Come and experience London’s latest culinary pop-up.
Polo lounge pop-up
Like The Dorchester, The Beverly Hills Hotel in California has enjoyed a long and illustrious history. This summer, its famed Polo Lounge restaurant at will become London’s latest pop-up restaurant at The Dorchester Rooftop. On the menu are LA favourites, such as their hugely popular McCarthy Salad and delicious chocolate soufflés.
London calling
Throughout the summer, The Dorchester Rooftop will be transformed into the Polo Lounge with its iconic décor and pink bougainvillea flowers. Soak up the sun from our exclusive rooftop location overlooking Hyde Park, as you dine in scenic splendour on a series of Californian classics.
McCarthy Salad
The famous McCarthy Salad is named after the polo-playing millionaire Neil McCarthy who had chefs at The Beverly Hills Hotel make this specific salad for him. It’s been on their menu since 1948 and around 600 salads are still served at the hotel every week.
Rooftop or homemade
If you’re not able to visit The Dorchester Rooftop or the original Polo Lounge to experience the McCarthy Salad, here’s how you can make it in the comfort of your own home. Trust us, it’s the perfect accompaniment to any summer barbecue.
For the salad
¼ head sliced iceberg lettuce
½ head sliced romaine lettuce
½ cup diced, grilled free-range chicken
½ cup diced, roasted red beets
¼ cup diced free-range egg yolk
¼ cup free-range egg white
½ cup finely diced aged cheddar cheese
½ cup applewood-smoked bacon
¼ cup diced tomato
¼ cup diced avocado
For the dressing
1 cup balsamic vinegar
1 shallot
1 tbs brown sugar
3 cloves roasted garlic
1 tps Dijon mustard
Salt and black pepper to season
Rapeseed or canola oil
Method
Slice and dice all the salad ingredients and artfully arrange in a bowl.
Place the dressing ingredients in a blender and drizzle in the oil to emulsify.
Gently pour the dressing over the salad and enjoy!
