Chef Jonathan Fisher’s cinco leches cake

When asked to share his favourite recipe, our executive pastry chef at The Beverly Hills Hotel didn’t need to pause for thought. He loves to make this special cake for family and friends, and it’s always on the Polo Lounge menu.

Indulgent dessert

I created this recipe as a fresh twist on the traditional tres leches cake. I thought it would be fun to make it with oat milk as it’s so popular and works wonderfully well. Another variation is putting the jam underneath the cake so it’s a surprise when it’s discovered. For me, and I know others agree, it’s a delightful mix of sweet, sour and salty flavours that really excite your taste buds. Enjoy!

THE RECIPE

Ingredients

  • – 5/8 cup white wine
  • – 2/3 cup butter
  • – 2 1/2 cups sugar
  • – 8 medium eggs
  • – 1 tbsp vanilla extract
  • – 2 cups + 2 tbsp plain flour
  • – 2 cups + 2 tbsp self-raising flour
  • – 3 tsp baking powder
  • – 2 tsp salt

 

Method

  1. 1. Pour the wine into a pan and bring to the boil then let it cool to room temperature
  2. 2. Mix the butter and sugar together until light and fluffy
  3. 3. Slowly mix in the eggs and vanilla extract
  4. 4. In a separate bowl, mix all the dry ingredients together and sift
  5. 5. Add the dry ingredients to the butter mixture and mix well
  6. 6. Stir in the white wine and add the mixture to a 9×13” cake tin
  7. 7. Bake for 40 minutes at 325°F/160°C followed by 30 minutes at 300°F/150°C

For the soak

Ingredients

  • – 2/3 cup whole milk
  • – 2/3 cup double cream
  • – 1/2 cup condensed milk
  • – 1/2 cup evaporated milk
  • – 3/4 cup oat milk
  • – 1 tbsp vanilla extract
  • – 1/2 tsp salt

 

Method

  1. 1. Mix all the ingredients together
  2. 2. Using a small skewer, poke holes into the entire surface of the cake and then slowly pour some of the milk mixture over cake.
  3. 3. Gently continue pouring until all the mixture has been absorbed into the cake
  4. 4. Cover with foil and chill in the fridge for at least 8–12 hours

FINISHINGS TOUCHES

Ingredients

  • – Jar of gooseberry jam
    – 1/3 cup crème fraîche
    – 3/4 cup double cream

 

Method

  1. 1. Spread a generous helping of your chosen jam on a serving dish. (We make our own gooseberry jam but feel free to buy this for ease)
  2. 2. Place your cake on top of the jam
  3. 3. Whip the crème fraiche and double cream together and spread on top of the cake
