Meet executive pastry chef Ezio Redolfi
In true Italian style, Ezio Redolfi’s love of great food inspired him to become a pastry chef and turn his passion into a career. Here at Hotel Eden, he’s best known as the creator of our decadent chocolate afternoon tea creations served at La Libreria.
What’s your hotel signature dish?
It’s my tiramisu, a dish that has a special place in my heart because it’s one of the first desserts that I ever learnt to make. Over the years, I’ve refined this great Italian recipe to make it lighter and more delicate, which is how I like my desserts to be.
What do you cook at home for friends?
I like experimenting with typical dishes from all over the world, rather than having a classic dish I always rely on. That way, my friends always get to try something new when we get together.
Can you suggest an easy yet impressive dessert?
Yes these lovely mini cheesecakes. Whip 200g of cream cheese with 200g of double cream and 80g of caster sugar. Put a couple of tablespoons of muesli in individual glasses and add a layer of the whipped cream mixture. To finish, slice a selection of fresh berries and mix with a little lemon juice and a teaspoon of sugar then place on top of each dessert and serve.
What are your three favourite ingredients?
Vanilla is undoubtedly one of my favourite flavours and on every trip I take I spend time looking for more varieties. Passion fruit is another favourite, I love it’s sourness which lends a lightness to my desserts. Last, but not least, almonds because they remind me of the biscuits my mum used to make for me as a child.
What’s your favourite kitchen gadget?
That would be my rubber spatula. I use it all the time and I love the way it leaves bowls perfectly clean so I don’t waste a thing.
Chefs work long hours, how do you like to spend your time off?
I like to unwind by going to the gym, watching movies and spending my time with friends. I also enjoy playing with my 3D printer as a creative way to dream up my next dessert.
What’s your favourite food experience from around the world?
The unforgettable experience of tasting a nougat-like dessert in Zanzibar. It still amazes me how they managed to prepare such an amazing dessert using only basic tools. It was made all the more amazing because we were standing on a sandbank in the ocean, watching a spectacular sunset.
